Use of CO2 (carbon dioxide) gas sensors in food processing extends
the storage and usable shelf life of both fresh and shelf stable food
products. In meat processing, C02 gas sensors assist in retaining the
natural meat color and inhibits bacterial growth.
The most common reason for use of CO2 gas sensors is
to exclude oxygen (O2) from the atmosphere contained inside the
storage packaging. When oxygen levels can be dropped below 2.0%, the
amount of deleterious oxidation reactions in stored foods can be
greatly decreased resulting in longer palatability and nutritional
shelf live.
A less common, but very important use for CO2 gas sensors is fumigation. This is the killing or retarding of insect
life contained in the food product.
